Ingredients:
- 1 1/2 cups sugar
- 1 cup margarine or butter, softened
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup dark seedless raisins
- 3 cups quick cooking oats
- 3/4 cup walnuts, chopped
- 2 cups McIntosh apples, peeled, cored and diced
- In large bowl, with mixer at medium speed, beat sugar and margarine until light and fluffy; about 5 minutes
- Add flour, baking soda, cinnamon, vanilla, salt, and eggs; beat just until blended
- With spoon, stir in apples, oatmeal, raisins, and walnuts
- Preheat oven to 350° F
- Drop batter on 2 large ungreased cookie sheets
- Place cookie sheets on 2 oven racks. Bake cookies 20 to 25 minutes until golden, rotating cookie sheets between upper and lower racks halfway through baking time.
