McIntosh-Oatmeal Cookies

Ingredients:

  • 1 1/2 cups sugar
  • 1 cup margarine or butter, softened
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup dark seedless raisins
  • 3 cups quick cooking oats
  • 3/4 cup walnuts, chopped
  • 2 cups McIntosh apples, peeled, cored and diced
Directions:
  1. In large bowl, with mixer at medium speed, beat sugar and margarine until light and fluffy; about 5 minutes
  2. Add flour, baking soda, cinnamon, vanilla, salt, and eggs; beat just until blended
  3. With spoon, stir in apples, oatmeal, raisins, and walnuts
  4. Preheat oven to 350° F
  5. Drop batter on 2 large ungreased cookie sheets
  6. Place cookie sheets on 2 oven racks. Bake cookies 20 to 25 minutes until golden, rotating cookie sheets between upper and lower racks halfway through baking time.
