Almond Toffee

Ingredients:
  • 2 cups sliced almonds
  • 2 Tablespoons light corn syrup
  • 1 cup sugar
  • 1 cup butter, softened, plus two additional tablespoons for greasing

Directions:

  1. Line 13x9 inch pan with foil and grease using 1 Tablespoon butter
  2. Grease heavy saucepan using 1 Tablespoon butter
  3. In saucepan, combine butter, sugar, and corn syrup
  4. Bring to boil over medium-high heat, stirring constantly. Cook until golden brown, usually 3-4 minutes.
  5. Remove from heat.
  6. Stir in almonds, then spread in 13x9 inch pan and smooth with spatula
  7. Place pan in refrigerator until toffee is firm
  8. Break into pieces to serve
