Banana Nut Bread

Ingredients:
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup soft margarine
  • 2 eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 cup mashed ripened bananas
  • 1/2 cup buttermilk
  • 1 cup chopped pecans or walnuts

Directions:

  1. Preheat oven to 350° F
  2. Cream sugar, salt and butter thoroughly in large bowl
  3. Beat eggs into mixture, one at a time, until light and fluffy
  4. In a second bowl, sift together flour, baking powder, baking soda and nutmeg
  5. In a third bowl, Combine bananas and milk
  6. Alternate between adding the dry ingredients and the banana mixture to the butter mixture, blending well after each addition
  7. Add nuts and mix briefly
  8. Turn batter into greased 9x5 loaf pan
  9. Bake at 350° F about 75 to 80 minutes or until pick comes out clean
  10. Turn out loaf on cooling rack
  11. Recipe doubles well
