Ingredients:
- 1 cup sugar
- 1/2 teaspoon salt
- 1/2 cup soft margarine
- 2 eggs
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 1/4 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1 cup mashed ripened bananas
- 1/2 cup buttermilk
- 1 cup chopped pecans or walnuts
Directions:
- Preheat oven to 350° F
- Cream sugar, salt and butter thoroughly in large bowl
- Beat eggs into mixture, one at a time, until light and fluffy
- In a second bowl, sift together flour, baking powder, baking soda and nutmeg
- In a third bowl, Combine bananas and milk
- Alternate between adding the dry ingredients and the banana mixture to the butter mixture, blending well after each addition
- Add nuts and mix briefly
- Turn batter into greased 9x5 loaf pan
- Bake at 350° F about 75 to 80 minutes or until pick comes out clean
- Turn out loaf on cooling rack
- Recipe doubles well
