Ingredients for cake:
- 1 cup sugar
- 2/3 cups pumpkin
- 3 eggs
- 3/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 Tablespoons butter or margarine
- 8 ounces cream cheese
- 3/4 teaspoon vanilla
- 1 cup powdered sugar
- Mix together sugar, pumpkin, and egg
- Add flour, baking powder, and cinnamon, mixing well
- Grease and line jelly roll pan (10x15x1/2) with wax paper
- Grease wax paper
- Pour mixture into prepared pan
- Sprinkle batter with 1/2 cup chopped walnuts or pecans
- Bake 15 minutes at 375°F
- While baking, beat filling ingredients in separate bowl and set aside
- When cake is done, turn out onto cloth which is well-covered with powdered sugar
- Leaving paper on, roll up like jellyroll with paper to the inside
- Cool completely
- Once cooled, remove wax paper.
- Spread cake with filling. Gently reroll.
- Wrap in plastic wrap and chill for aproximately 2 hours.
- Cut into 1/2 inch slices & serve.
