Pumpkin Roll

Ingredients for cake:
  • 1 cup sugar
  • 2/3 cups pumpkin
  • 3 eggs
  • 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
Ingredients for filling:
  • 2 Tablespoons butter or margarine
  • 8 ounces cream cheese
  • 3/4 teaspoon vanilla
  • 1 cup powdered sugar
Directions for cake:
  • Mix together sugar, pumpkin, and egg
  • Add flour, baking powder, and cinnamon, mixing well
  • Grease and line jelly roll pan (10x15x1/2) with wax paper
  • Grease wax paper
  • Pour mixture into prepared pan
  • Sprinkle batter with 1/2 cup chopped walnuts or pecans
  • Bake 15 minutes at 375°F
  • While baking, beat filling ingredients in separate bowl and set aside
  • When cake is done, turn out onto cloth which is well-covered with powdered sugar
  • Leaving paper on, roll up like jellyroll with paper to the inside
  • Cool completely
  • Once cooled, remove wax paper.
  • Spread cake with filling. Gently reroll.
  • Wrap in plastic wrap and chill for aproximately 2 hours.
  • Cut into 1/2 inch slices & serve.
