Cherry Chocolate Biscotti

Ingredients:

  • 3 cups flour
  • ¾ cup sugar
  • ½ cup margarine or butter, softened
  • 2 teaspoons almond extract
  • 3 large eggs
  • 2 teaspoons baking powder
  • ½ cup candied cherries
  • ½ cup miniature chocolate chips
  • 3 tablespoons chocolate chips and 3 tablespoons vanilla chips, optional

Directions:

  1. Preheat oven to 350° F
  2. Mix together sugar and butter in large bowl
  3. Add almond extract and eggs and blend well
  4. Add flour and baking powder and mix well
  5. Stir in candied cherries and miniature chocolate chips
  6. Shape dough into 2-10" logs. Place logs 5 inches apart on lightly greased cookie sheet. Flatten each to 3 inch widths.
  7. Bake 350 for 20 to 25 minutes or until set. Cool 10 minutes
  8. Cut logs diagonally with a serrated knife into ½" slices. Place on ungreased cookie sheet. Bake at 350 for 8 to 10 min. Turn. Bake an additional 5 minutes. Cool completely on wire racks.
  9. With spoons, drizzle dark and white melted chocolate chips over tops of baked biscotti.
  10. Store in covered container. 3 dozen cookies.
