Ingredients:
- 3 cups flour
- ¾ cup sugar
- ½ cup margarine or butter, softened
- 2 teaspoons almond extract
- 3 large eggs
- 2 teaspoons baking powder
- ½ cup candied cherries
- ½ cup miniature chocolate chips
- 3 tablespoons chocolate chips and 3 tablespoons vanilla chips, optional
Directions:
- Preheat oven to 350° F
- Mix together sugar and butter in large bowl
- Add almond extract and eggs and blend well
- Add flour and baking powder and mix well
- Stir in candied cherries and miniature chocolate chips
- Shape dough into 2-10" logs. Place logs 5 inches apart on lightly greased cookie sheet. Flatten each to 3 inch widths.
- Bake 350 for 20 to 25 minutes or until set. Cool 10 minutes
- Cut logs diagonally with a serrated knife into ½" slices. Place on ungreased cookie sheet. Bake at 350 for 8 to 10 min. Turn. Bake an additional 5 minutes. Cool completely on wire racks.
- With spoons, drizzle dark and white melted chocolate chips over tops of baked biscotti.
- Store in covered container. 3 dozen cookies.
