Sweet Potato Casserole

Ingredients for Casserole:
  • 3 cups sweet potatoes
  • 1/2 cup soft margarine
  • 1/2 cup milk
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla

Ingredients for Topping:

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup margarine
  • 1 cup chopped nuts

Directions:

  1. Preheat oven to 350° F
  2. Beat casserole ingredients together; pour into buttered casserole dish
  3. For topping, crumble brown sugar, flour and margarine ingredients together with fork or pastry cutter.
  4. Place topping over potato mixture.
  5. Sprinkle 1 cup chopped nuts over topping
  6. Bake at 350° F for 30 minutes or until bubbly
