Dave Rathbun's chocolate chip cookies

Dave Rathbun was a Business Objects expert for Integra Solutions. I had the pleasure of working with him. He has since retired and discontinued his blog, but thanks to the Internet Archive Wayback Machine, we still have access to his most excellent chocolate cookie recipe from his blog.

The cookies have a great texture- a bit crunchy on the outside and tender on the inside. Instead of a single bag, we mixed 1/2 bag of Kroger Private Selection dark chocolate chips with 1/2 bag Kroger Private Selection milk chocolate chips, so the overall result was "semi-sweet". The Private Selection chips use Belgian chocolate and are a bit larger and much more flavorful than Nestle's chips.

Also, notice the use of a Silpat silicone baking mat in Dave's photograph. We started using these after watching Martha Stewart bake with them. The mat makes a dramatic difference in the texture of cookies. As a side benefit, the cookies slide easily from the mat.
