Italian Zucchini Crescent Pie

It's that time of year again. Our next door neighbor has a couple of zucchini plants and now has zucchini everywhere. She graciously brought us some zucchini and I requested my favorite zucchini pie.

My mom started making this in the 1980's. The folklore behind the recipe is that it originally appeared in Southern Living magazine and some intrepid cook replaced the pie crust with Pillsbury crescent rolls, entered the Pillsbury Bake Off, and pocketed the $40,000 grand prize.
